S'inicià el 1958 actuant en films produïts o realitzats per Roger Corman. De la seva interessant filmografia hom pot destacar Five Easy Pieces (1970), de B. Rafelson; Chinatown (1974), de R. Polanski; One Flew Over the Cuckoo's Nest (1975), de M. Forman, per la qual obtingué l’Oscar d’interpretació; The Missouri Breaks (1975), d’A. Penn; The Shining (1980), de S. Kubrick; The Postman Always Rings Twice (1981), de B. Rafelson; Terms of Endearment (1983), de James L. Brooks; Prizzi's Honor (1985), de J. Huston; Heartburn (1986) i Wolf (1994) de M. Nichols; Mars Attacks (1996), de T. Burton; As Good as it Gets (1998), de J. Brooks, per la qual obtingué l’Oscar d’interpretació secundària; About Schmidt (2002) d’A. Payne; Anger Management (2003) de P. Segal; i Something's Gotta Give (2003), de N. Meyers. Ha dirigit alguns films ( Going South , 1978; The Two Jakes , 1990).
